Easy Brownie Cookies

Some recipes are just so easy, they are no-brainers. This is such a recipe. In the recent newsletter, I listed some of my favorite chocolate and baking things this time of year. I mentioned you could make an amazing cookie out of a brownie mix. I dropped the hint to add a little flour to the brownie mix as well as a stick of melted butter and 1 egg. But I did not write up the recipe, so here it is! This recipe was designed around the Trader Joe’s 16 oz brownie mix, which is very good and very chocolatey. But you cannot plop the batter made by package directions onto a baking sheet without them spreading and flattening out. I wanted a cookie with more height, one that was chewy, and one that had the sweetness of powdered sugar to slightly cut the intense chocolate taste. So thus, my method adds flour for structure and rolls the chilled batter in powdered sugar before baking. Yum!
