Easy Fried Rice

I often have a hard time coming up with sides to serve with dinner. I’ve got my old stand-bys like mashed potatoes or a vegetable, but those don’t work with everything. Last week I made eggrolls for dinner and while I usually just serve plain white rice with it, I remembered I had this recipe for Fried Rice pinned.

The recipe is really easy (and really yummy) and is originally from Life as a Lofthouse. I served it with a family favorite, turkey eggrolls.

Even though it has 1/4 cup of soy sauce, I still needed to add just a touch of salt to mine. I wouldn’t salt it in the pan though, since that may be too much for some.

It made quite a bit, and actually tasted better the next day with leftovers. All five of us loved it, and it’s a keeper!

Simple things make me laugh

So I’m a huge Angelina Jolie fan. Huge enough that my first full time freelance blog job was to write about Brad and Angelina. When that network went down I decided to just go ahead and fly solo with it, starting up my own Brad and Angelina blog. I love her style, her parenting approach, her movies, and her humanitarian work.

But that didn’t stop me from laughing myself silly at this photo that I found, definitely my favourite parody among the huge meme that has started as a result of Angelina’s leg-flashing dress at the Oscars.

St. Patrick’s Day Jar

Since it’s the end of February, I’ve been trying to come up with an idea to replace the Valentine’s Day candy corn that have been in a decorative jar on our dining table. I couldn’t think of any green candies to go in it for March and St. Patrick’s Day, though.

Last week I was walking down the aisle at the grocery store and passed by the bags of dried beans. The bright green split peas caught my eye and I grabbed up three bags (about $1 each).

I use split peas pretty often for cooking and know that the bag always recommends that you wash the “field dust” off the peas before using them. I figured I’d rinse them off this time as well, even though I wasn’t cooking with them.

What I didn’t realize was that they get pretty clumpy when they’re left to sit after being wet, so my husband and I dumped out the colander onto a baking sheet lined with towels to let them air dry, then broke up any further clumps we found.

Overall it worked out really well, and makes a nice little decoration for St. Patrick’s Day!

Every once in a while I’ll have a few days where all I want to do is bake. This past weekend was one of those times, and I searched through all my food pins to find one or two I could make with what I had in the pantry.

Tie it in a Bow

I’m not very girly, so finding girly things that are easy to do for my daughters is always helpful.  This one was a big hit for me.

A You Tube tutorial in how to make a hair bow, literally.  A bow out of your little girls’ hair.

It was much easier than I thought it would be.  Here is our end result:

What didn’t work:  I spritzed my daughter’s hair with water before putting it into a ponytail (to help control the wispies), and it made the hair too heavy, so it didn’t stand up as nicely as the woman’s hair in the tutorial does.  Of course, I and both of my daughters have very thick hair, so even without it being wet, their hair might not stand up as much, but I’ll try it again without the water and see.  This will definitely be a go-to hair style for dance class.
