Animal welfare is high on our list of priorities; consequently whenever we use egg in our products we only use Freedom Food free range egg. It can be found in our Lemon curd, mayonnaise and mayonnaise based products.

No artificial colourings, artificial flavourings or artificial sweeteners are used in our products and they are gluten and GM free. We do not specifically source organic ingredients however some of our ingredients are organic although we do not make any organic claims on our products.

Freedom Foods and how we are part of it

Freedom Food is the RSPCA's farm assurance and food labeling scheme. It is a registered charity which is the only UK farm assurance scheme dedicated to improving welfare standards for the 900 million farm animals reared for food each year in the UK.

Freedom Food wants to give consumers a way of identifying food that has come from animals reared in higher welfare environments. The Freedom Food logo will only be found on products where strict RSPCA welfare standards are met.

Stokes Sauces aim to be a responsible food manufacturer. Using over 7 tones of free range liquid pasteurized whole egg a year in our products, animal welfare is high on our list of priorities and is an issue that we will not shy away from, despite the extra cost to us. That is why we are members of the Freedom Food Scheme and why you will see the Freedom Food Trade Mark on our products where we use free range egg.

Every year we are audited on behalf of Freedom Food to ensure that we continue to comply with the regulations of the scheme.

We are one of the few manufacturers who only use Freedom Food free range egg in their products.

Extra Jam - What this actually means in relation to other jams

Where our products are labelled 'extra jam' it means that they have more fruit in them than products just labeled as 'jam'. We can make this claim because we meet the compositional requirements of the Jam and Similar Products (England) Regulations 2003. We want our products to be bursting with flavour and good quality fruit, which is why we only make 'extra' jam products.

For example, minimum fruit requirement in the following product would be:

Strawberry Extra Jam = 45% Strawberries vs Strawberry Jam = 35% Strawberries

Saturated and mono saturated fats - Rapeseed Oil

We like to use rapeseed oil in our products because of the healthier fat profile it has compared to other oils. Rapeseed Oil has the lowest saturated fat of any culinary oil and less than half that of Extra Virgin Olive Oil. The oil is high in mono unsaturated and poly unsaturated fat and is a good source of essential omega oils (3, 6 and 9), which for some time have been known to have beneficial health effects such as helping to lower cholesterol and maintain a healthly heart, joint mobility and brain function.

Rapeseed oil has a very subtle flavour profile which is ideal when making mayonnaise. It does not have a pungent flavour or aroma, which also makes it perfect for carrying other flavours that we use in our flavoured mayonnaise range.

Our products being Gluten Free

At Stokes Sauces we are committed to providing clear labelling information. We also do not wish to discriminate against people with allergies or intolerances being able to enjoy the foods that we make. That is why where a gluten derived or containing ingredients is used, if the content of gluten is no more than 20 mg / kg, then we will state that the product is 'gluten free'.

Food labelling legislation makes it clear that where cereals containing or are derived from gluten are present in a product, then they have to be labelled as so.

Food law states that if a product contains no more than 20 mg / kg of gluten, it can be labeled as 'gluten free'. This applies to ingredients such as malt vinegar, ale and malt extract which are ingredients listed in some of our product labels as being derived from barley.
