There are few things I love more than a big, crunchy bowl of granola. I’ve experimented with several recipes over the last year, but this is one of the easiest and definitely a favorite in taste alone! Eat by itself, mix with a healthy non-dairy yogurt, or eat topped with berries and some delicious non-dairy milk. In a word: yum. When you have a leftover fridge full of veggies you don’t know what to do with, toss them with some olive oil and heart healthy pasta (brown rice pasta and quinoa pasta) for a wonderful primavera. The addition of veggie stock, soymilk and a tablespoon of flour gives the dish a richness without excess calories. Use whatever vegetables you have, and play with the addition of fresh herbs for an extra pop of flavor. Finish off your meal with some delicious non-dairy ice cream.
