    The secret of cognac is in the soil from which it comes.

    For this reason, Rémy Martin only uses grapes from the most respected growing regions - the Grande Champagne and Petite Champagne.

    These regions contain a unique type of chalk-flecked soil that reflects light and ripens the grapes to absolute perfection.

    The eaux-de-vie that come exclusively from these crus, in the heart of the Cognac region, offer a palette of unique flavors and tastes.

    It is these very subtleties in taste that are not only recognized by the growers but protected by French law.

    Like the Fine Champagne Cognac, only made with Grande Champagne and Petite Champagne grapes, which is the only blend of two crus protected by the Appellation d'Origine Contrôlée.

    The legal alliance between winegrowers, distillers and Rémy Martin started in 1965. It was the first contract between Grande Champagne & Petite Champagne and Rémy Martin, finally forming the Alliance Fine Champagne.

    The art of the Cellar Master

    Creation of cognac is the work of the Cellar Master. By subtly blending eaux-de-vie (waters-of-life) like an alchemist, he creates the Fine Champagne cognacs of the House of Rémy Martin.

    Our Cellar Master, Pierrette Trichet, blends and combines these eaux-de-vie to create our cognacs. Coming exclusively from Grande and Petite Champagne regions, these essences offer a palette of unique flavors and tastes.

    Respecting the heritage of several hundred years, Pierrette Trichet reveals its unique aromatic intensity, as well as making sure it remains true to the Rémy Martin Fine Champagne cognac style.

    After a century, Pierrette Trichet is only the fourth person to take on this prestigious role in the House of Rémy Martin. She is also the first woman to ever reach this level of expertise.

    • Our Secrets

      Time and talent are needed to reveal the true heart of cognac. Fine Champagne Cognac is cognac from Grande Champagne and Petite Champagne, made with 50% Grande Champagne. The eaux-de-vie from these regions have the greatest aging potential and are therefore treasured more.

    • From the vine to the wine

      Without grapes, one cannot make cognac. They are the heart of cognac as they offer aromatic superiority over other raw materials like barley for whiskies and corn for vodkas.

      As a result, the grape varieties used in the production of Rémy Martin are exclusively selected, such as Ugni Blanc (97%) and Colombard, Folle Blanche (3%).

      These are harvested in early October, then gently pressed. The resulting juice is left to ferment for 5-7 days, making a 7-9% white wine, perfect for distillation.

    • Distilling Rémy Martin and our waters-of-life

      Since 1724, Rémy Martin has been first and foremost a vigneron. For almost 300 hundred years, they have been growing grapes and distilling wine into their precious eaux-de-vie.

      Even today, Rémy Martin continues to respect their distilling traditions by remaining committed to classical methods. For example, using lees in small copper stills called alambics to produce a more intense spirit with better depth and intensity of flavor.

      This adherence to tradition and quality has helped them maintain their consistency to keep their signature aromatic flavor.

      Eaux-de-vie (waters-of-life) are what give a cognac its distinctive, signature aromatic intensity and flavor. They can only be created after a long, delicate, and traditional distillation process. The very aromatic heart of Fine Champagne cognac.

      Furthermore, since only the finest eaux-de-vie can be selected, the Alliance Fine Champagne, together with wine growers and distillers, are extremely particular when it comes to the rigorous selection of these eaux-de-vie.

    • Aging in Limousin oak barrels

      The barrels we use for our laborious aging process are made exclusively from French Limousin oak which contributes to the aromatic development of the blended eaux-de-vie.

      Limousin oak allows a delicate yet substantial exchange between the eaux-de-vie and the air inside the cellar. And thanks to its large and open grain, it imparts a rich vanilla-like flavor to the aging cognac.

      Revealing the aromatic heart of the blended eaux-de-vie is probably one of the most subtle and intricate responsibilities. For this reason, our Cellar Master ages them exclusively in Limousin oak barrels.

      And since Fine Champagne eaux-de-vie have greater aging potential, Rémy Martin chooses to age them for much longer than the minimum time required by law.

    • Blending our cognacs

      Blending eaux-de-vie of different ages and different crus is like creating a genuine masterpiece, just like that of a painter or a musician. And it is the Cellar Master who achieves this by closely watching each eau-de-vie in their oak barrels and tasting them regularly.

      Indeed, blending is like conducting a symphony orchestra, with each eau-de-vie offering a different aromatic note. Our Cellar Master, Pierrette Trichet, and her dedicated tasting team carefully select every eau-de-vie for each specific cognac.

      Before bottling, Pierrette Trichet and her team blend these eaux-de-vie together to harmoniously bond in a process known affectionately as ‘le mariage’.

      At Rémy Martin, we have a true treasure in our cellars - precious reserves of Fine Champagne eaux-de-vie, which represent 115 years of the vignerons’ craft.
