FAQ

What is the Toddy® Cold Brew Process?
The Toddy® process is a patented extraction method that uses time instead of heat to extract the pure flavors of coffee, tea and botanicals. The result is a complex flavor profile with a rich and smooth taste that is difficult to accomplish with more traditional extraction methods. The Toddy® process allows S&D’s Food Innovation and Ingredients team to produce unique flavor profiles for coffee extracts and coffee concentrates, and even a variety of tea extract blends as well. My product application is for hot beverages – does it make sense to use the Toddy® process?
“Cold Brew” refers to the extraction temperature rather than the final application. The Toddy® process is ideal for many hot beverage applications. Feel free to contact us to learn more about our coffee concentrate and coffee extract offerings.

Are there any other benefits?
The Toddy® process is ideal for extracting rich, smooth flavors and aromas that may be too subtle with thermal extraction methods. And because the Toddy® process does not extract certain volatile oils in coffees and teas, Toddy® extracts stay fresher longer, naturally.

Is the Toddy® Cold Brew Process just for coffee?
While the Toddy® process was developed for coffee extracts, the Toddy® Cold Brew process is ideal for a variety of tea concentrates and botanical extracting applications.

What if my project requires a flavor profile with astringent notes?
S&D’s food science team will employ the Toddy® (cold brew) process to achieve certain flavor profiles and will opt for thermal extraction (hot brew) methods for other flavor profiles. We will evaluate the needs of your project and take the time to select extraction method(s) and ingredients that will work best to create your ideal coffee extract or tea concentrate.
