Rice - with Summer Sausage.&nbsp; I had planned to make it over the weekend since both the Mid and Schmoo were home, but time just got away from me.&nbsp; :-/<BR><BR>Since I had bought all the ingredients and James &amp; Of course, there had to be cream cheese frosting - because it's his favorite.&nbsp; I also know he really likes anything raspberry - so I decided to make&nbsp;pound cake layers with a home-made raspberry filling topped with cream cheese&nbsp;frosting.&nbsp;&nbsp;<BR><BR>To&nbsp;make the&nbsp;cake, you have to make the raspberry filling the night before as it has to spend the night in the refrigerator so it will be ready to spread on&nbsp;the cake.&nbsp; Then the next day you make the <A class="justageorgiapeach.com/2012/03/30/count-this-----1-2-3-4-pound-cake.aspx" target=_blank>pound cake recipe</A>-&nbsp;I used this one&nbsp;and the only difference is that you put into two layer cake pans and cook for approximately 35 minutes until they are nicely browned.&nbsp; To frost the cake, I used my special <A class="justageorgiapeach.com/2012/03/13/the-best-cream-cheese-frosting-you-will-ever-taste.aspx" target=_blank>cream cheese frosting</A>&nbsp;with a little twist.<BR><BR>Here we go:<BR><BR>HOME-MADE RASPBERRY FILLING<BR><BR>2 - 12 oz packages of frozen raspberries (not packed in syrup)<BR>1-1/3 cups water<BR>2&nbsp;cups sugar<BR>2 tablespoons lemon juice<BR>6 tablespoons dissolved in 1/2 cup water<BR><BR>In a large saucepan, combine the raspberries, water, sugar and lemon juice.&nbsp; Bring to a boil and simmer for 15-20 minutes or until the raspberries have broken down.&nbsp; Remove the mixture from the heat and strain using a fine mesh sieve.&nbsp; Return the liquid, strained mixture back into the saucepan and dissolve the cornstarch in 1/2 cup of water.&nbsp; Whisk the cornstarch mixture into the raspberry mixture and bring the mixture back to a boil.&nbsp; Simmer for 5 more minutes, stirring occasionally.&nbsp; Remove from the stove and cool completely.&nbsp;
